Bakers Delight! ദ്ദി◝ ⩊ ◜.ᐟ

Things I Made Instead of Being Productive.  ( Bakers Edition !)

Creation #1. This is Peanut Butter Cookies with Butterfingers and Vanilla Icing. I made this for my very mysterious man lol. They were very chewy and crunchy ( my favorite texture) the icing added an extra sweetness to the bite, plus the Butterfingers as well. Recipe down below  ↓

  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup creamy peanut butter
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped Butterfinger pieces
  • ¼ cup extra Butterfinger pieces for the tops (optional
    • Directions:

      1. Heat oven to 375°F (190°C).
      2. Stir your cookie mix, softened butter, Butterfingers and egg together until a dough forms.
      3. Drop rounded spoonful's of dough onto an ungreased cookie sheet, leaving space between them.
      4. Bake for about 8–10 minutes, until the edges are lightly golden.
      5. Let them cool on the baking sheet for a few minutes, then move them to a cooling rack.
      6. Add pre-made vanilla icing once cooled.

Creation #2.  Red Velvet Viral Dot Cake. I fell victim into the viral trend of the dot cake and i will say TikTok did "the thing". The dot sprinkles was a GREAT! crunch with creamy and soft red velvet cake. Made two for me and my mysterious man.  Sadly this time this creation was not homemade but i will still list the recipe below as well.  ↓

    •  1 Box of red velvet Duncan Hines cake mix.
    • 1 Cup of Water.
    • 1/2 of Vegetable Oil
    • 3 Large eggs
    Directions:
    1.  Preheat your oven to 350°F.
    2. Grease your cake pans with cooking spray or shortening and lightly flour them.
    3. Add the cake mix, water, oil, and eggs to a large bowl.
    4. Beat with an electric mixer on low for 30 seconds, then medium for about 2 minutes, scraping the sides of the bowl as needed.
    5. Pour the batter evenly into your prepared pans.
    6. Check with a toothpick—it should come out clean or with a few moist crumbs.
    7. Let the cake cool completely before frosting.

Creation #3. Banana Bread with Semi Sweet Chocolate Chips. This was a very sweet, moist creation. Hot out of the oven is the best way to have this. In my opinion at least.  Chocolate chips gave a nice but not too sweet bite and severed up at least 8 or 7 slices if i remember correctly. Recipe below because i am no gate keeper!   ↓

    • 3 very ripe bananas, mashed
    • ½ cup melted butter
    • ¾ cup sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 1½ cups all-purpose flour
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • ½ teaspoon cinnamon (optional)
    • ¾ cup semi-sweet chocolate chips

    1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
    2. Mash the bananas in a large bowl.
    3. Stir in the melted butter and sugar.
    4. Add the eggs and vanilla and mix until combined.
    5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
    6. Slowly add the dry ingredients to the banana mixture. Mix just until combined—don't overmix.
    7. Gently fold in ½ cup of the chocolate chips.
    8. Pour the batter into your loaf pan.
    9. Sprinkle the remaining ¼ cup chocolate chips over the top. 🍫
    10. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out mostly clean.
    11. Let it cool in the pan for about 10–15 minutes, then transfer it to a cooling rack.

Creation #4. Fudge Brownies. This is just run of the mill fudge brownies with an extra flair, that being dot sprinkles because i LOVE the crunch that they bring. My mom hated that i added sprinkles but oh well. My rule is you make it, slay it. Very Gen-z to say but hey!  Recipe Below ↓

    • ½ cup (1 stick) unsalted butter, melted
    • 1 cup granulated sugar
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • ½ cup unsweetened cocoa powder
    • ¾ cup all-purpose flour
    • ¼ teaspoon salt
    • 1/2 dot sprinkles
    1. Preheat your oven to 350°F.
    2. Line an 8×8-inch baking pan with parchment paper or lightly grease it.
    3. Melt the butter and let it cool slightly.
    4. Whisk the melted butter and sugar together.
    5. Add the eggs and vanilla and whisk until smooth and glossy.
    6. Add the cocoa powder, flour, and salt.
    7. Stir gently until everything is just combined. Don't overmix.
    8. Fold in the ½ dot sprinkles if using.
    9. Spread the batter evenly into your pan.
    10. Bake for 25–30 minutes.
    11. Let the brownies cool completely before cutting.
